										<content:encoded><![CDATA[<p>Saffron is cultivated in many environments characterised by different pedo-climatic conditions, and its global production is estimated at 418 t y−1 (Agricultural Statistics, 2018). It is largely cultivated in Iran, India, Afghanistan, Greece, Morocco, Spain and Italy. Iran is considered as the largest producer in the world, with 90 % of the global production. Moreover, Iran&#8217;s saffron production has increased over the past decade, from 59,000 ha and 230 t in 2007 to 108,000 ha and 376 t in 2017 with an average yield of 3.53 kg ha−1 (Koocheki et al., 2019). In detail, the areas under cultivation are in Khorasan Razavi (84,738 ha), Southern Khorasan (15,754 ha), Yazd, Fars, Isfahan, Kerman and Northern Khorasan (5,260 ha) as well as other provinces (2,248 ha) (Agricultural Statistics, 2018).</p>

Afghanistan (Herat Province) has a cultivation area of 7,557 ha, followed by India (Jammu and Kashmir regions) with 3,674 ha (Ganaie and Singh, 2019), Greece (Krokos Kozani, Karyditsa, Agia Paraskevi, Ano Komi, Kato Komi, Pefkopigi and Petrana) with 1000 ha, Morocco with about 850 ha (730 in Taliouine and 120 in Taznekht with a production of 4 t) (FAO, 2018), Spain with 150 ha (88 in Castilla-La Mancha, Albacete, Toledo, Cuenca and Ciudad Real), Italy with 70 ha and France with 37 ha. In Italy, saffron is more widespread in Sardinia (37–40 ha in San Gavino Monreale, Turri, Villafranca), Abruzzo (6 ha in L’Aquila), Sicily (5 ha in Enna). Other small cultivations are situated in Umbria (Perugia, Cascia), Tuscany (San Gimignano, Arezzo and Maremma Grossetana) and other regions of South Italy.</p>

<p>According to the available statistics, in European countries there was a drastic reduction in saffron production. In Spain, saffron dropped from 6,000 ha in 1971 to 150 ha, in Greece it decreased from 1,600 ha in 1982 to 860 ha, and in central Italy (Abruzzo) it fell from 300 ha in 1910 to 6 ha. Also, in India (Kashmir), there is now a rapid decline of the saffron industry: from 5707 ha with an annual production of 15.95 t in 1997 to 3,674 ha with an annual production of 9.6 t in 2015 (Daawar and Yadvinder, 2019). Despite Iran being one of the oldest historical saffron producing areas, saffron yield per unit area has significantly fallen from 5.1 kg ha−1 in 1982 to 3.5 kg ha−1 in 2017. Saffron yield loss can be caused by several factors, i.e.: poor soil fertility, the lack of availability of good quality corms as propagation material, and assured irrigation, infestation by rodents and diseases (Fusarium oxysporum f.sp gladioli, Penicillium spp, Rhizoctonia violacea), poor postharvest management, improper marketing facilities, adulteration and the adverse effect of climate change as well as the recent droughts.</p>

<p>The global market size of the saffron sector was 213 million US $ in 2016 (imports). Since 2013 exports in value have continuously increased, but since 2014, the exported quantity has decreased due to the exchange rate fluctuations faced by the Islamic Republic of Iran. The top exporters of saffron are Iran (48 %), Spain (27 %), Afghanistan (7.7 %), Greece (2.9 %), France (2.7 %) Hong Kong (2.5 %) and Portugal (2%). The top importers are Spain (23 %), Hong Kong (8.7 %), the United States (7.6 %), India (7.0 %), Italy (7.0 %), China (6.2 %), France (5.2 %), Saudi Arabia (4.2 %) followed by Sweden (3.8 %), Argentina and the United Arab Emirates (2.5 %) (https://oec.world/ en). In general, global imports of saffron grew 7% annually between 2012 and 2016, indicating that the industry has long-term sustainable growth potential. Saffron demand is increasing (+23 %) in South Asia. India is the fourth-largest saffron importer, where the explosive economic growth has made saffron accessible for an ever-increasing number of middle- and high-income households. Between 2012 and 2016, Afghanistan and Hong Kong (China) became fast and large exporters of saffron, and thus could be a serious competitor against other major exporters. In particular, Italy exports only 0.38 % of global export to Switzerland (18 %), United States (16 %), Germany (15 %), United Kingdom (10 %), Brazil (7.0 %), Spain (4.2 %), Russia (3.8 %) and imports 7.0 % of global import from Spain (39 %), Iran (30 %), Hong Kong (11 %), Greece (8.7 %) and China (3.3 %) (https://oec.world/en/).</p>

										<content:encoded><![CDATA[<p>Saffron is one of the most expensive cash crops among medicinal plants in the world and thus it has been called “the red gold”. It has been known for more than 4000 years and was used mostly in traditional medicine as a tonic agent and antidepressant drug.This spice is obtained from dried red stigmas of Crocus sativus L. flower and it is appreciated in the food industry to dye and perfume different dishes (i.e. ‘paella’ in Spain, ‘Milanese risotto’ in Italy, ‘Lussekatter’ buns in Sweden) and alcoholic beverages due to its colouring, flavouring and aroma capacity. Recently, the use of spices and functional foods has increased in the everyday diet for the prevention of chronic diseases or cancer. In particular, saffron is attracting attention from consumers thanks to its beneficial properties for human health.</p>

<p>Saffron can represent an income supplement, allowing the diversification of production, multifunctionality of farms and promotion of gastronomic tourism in sustainable agriculture. Saffron yield has dramatically fallen due to different problems, and so new investigations have paid attention to the improvement of stigma yield and quality through the choice of corm geographical origin as well as agronomic practices such as fertilising and use of biostimulants that can increase water and nutrient retention capacity.</p>

<p>To increase crop profitability, many researchers have focused their attention on the valorisation of saffron by-products, such as tepals, stamens, styles, leaves and corms. Saffron respects the principles of the circular economy because its by-products can safely be returned to the soil in the form of organic fertiliser and can provide additional value as sources of food supplements.</p>

In the literature, no reviews on saffron including by-products properties and uses have been reported. Therefore, this work aims to<br />
summarise, through recent studies, the history, world production, economic, genetic and botanical traits, agronomic management techniques (i.e. corm planting, flower harvesting), spice production methods (drying and storage), quality, beneficial properties of the saffron and its by-products.</p>
<h2>History and traditional uses</h2>
<p>Saffron is a very ancient spice and for almost four millennia it has been used in the treatment of 90 medical indications. Its dyeing, food and medicinal properties were mentioned by Homer (Iliad, Book IX and XII), Virgil (Georgian, IV 182), Hippocrates, Pliny (Naturalis Historia, XXI, VI), Ovid (Metamorphosis) and in the Old Testament’s “Song of Solomon”. In ancient Egypt (3100 B.C. to 476 A.D.), the first document which attested to its knowledge and use was the ‘Papyrus Ebers’ of the XV century B.C.. Assyrians and Babylonians used saffron in the treatment of dyspnea, head, menstruation, delivery and painful urination (Assurbanipal library, 668–627 B.C.). Saffron was used also by Cleopatra (69–30 B.C.) as a weapon of seduction, and by Semiramides as decoration in the Babylon’s hanging gardens.</p>

flowers. In India, its presence was reported in the third century A.D. by Wan Zhen, a Chinese medical writer. Saffron was used to colour the robes of Buddhist monks and in Ayurvedic medicine as carminative, emmenagogue, febrifuge, and anti-anxiety medicine as well as to cure arthritis, dysmenorrhea, asthma, and coughs. In China, some authors indicated the saffron origin with Mongol invaders and others reported its first presence in the third century A.D. used as a heart stimulant, anti-bacterial and anti-fungal agent.</p>

In Europe with the fall of the Western Roman Empire and the arrival of barbarians (fifth century A.D.), saffron cultivation declined. The spice was returned to the West thanks to the Arabs who introduced the crop in Spain from where it later spread to Europe (tenth century A.D.). In Italy, saffron was probably introduced by the Dominican Friar Santucci of Navelli (fourteenth century A.D.), who stole a saffron plant from Spain and planted it in Abruzzo (L&#8217;Aquila). 										<content:encoded><![CDATA[<p><strong>Iranian saffron is under serious threat as a result of US sanctions</strong>, which have led to this valuable spice, known as &#8220;red gold&#8221;, being smuggled into Afghanistan.</p>
<p>The obstacles created to the transport system and banking transactions for the export of Persian products, including saffron, are linked to the sanctions imposed by the United States on Iran in 2018, after Washington withdrew from the nuclear agreement.</p>
<p>&#8220;<strong>The unilateral sanctions on the Iranian economy have had a very negative effect on the activity of producers and exporters in the agricultural sector due to the limitations on foreign currency transactions,&#8221;</strong> lamented Ali Sharyatí, president of the Agriculture Commission of the Iranian Chamber of Commerce, in statements to Efe.</p>
<p>Added to this is the consequent devaluation of the national currency, the rial, which led the Iranian authorities to apply a restrictive regulation on foreign exchange, detrimental to exporters, some of whom have opted for smuggling to increase their income.</p>
<p><strong>&#8220;The existing foreign currency laws in the country have caused [saffron] to be smuggled into Afghanistan and exported from there,&#8221;</strong> Shariati said about the current situation of &#8220;red gold,&#8221; of which Iran is the world&#8217;s biggest producer.</p>

<p>The also president of the board of directors of the Saffron Export Development Fund explained that previously the saffron bulb was already being smuggled to Afghanistan to be cultivated there, but in the last two years, as a result of the sanctions, this illegal trade is being carried out with the flower&#8217;s own threads.</p>
<p><strong>Only between March 2019 and March 2020 (the year 1398 in the Persian calendar), 50 tons of Iranian saffron were smuggled into Afghanistan,</strong> according to Shariatí who called this situation a &#8220;serious threat&#8221; to the local market for this exquisite product.</p>
<p>With an annual production of about 500 tons, Iranian saffron is equivalent to more than 90% globally, but farmers and exporters do not get as much profit as they should.</p>
<p>&#8220;The smuggling of any product harms the healthy commercial activity of the country because the demand for companies working within the legal framework is transferred to this irregular sector and prices are reduced,&#8221; said Shariatí, who is also responsible for the largest saffron processing and packaging company in Iran, Novin Saffron, based in the northeastern city of Mashad.</p>
<p><strong>About Afghanistan, he added that in that country only 17 to 20 tons of &#8220;red gold&#8221; are produced, but &#8220;there the saffron that arrives from Iran is packed as if it was of Afghan origin </strong>and it is exported to different countries of the world like India and USA&#8221;.</p>
<p>Previously, within a legal framework, the main buyers of Iranian saffron were Spain and the United Arab Emirates, which have been joined more recently by Hong Kong and Vietnam, from where it is exported to China.</p>

<div class="ladillo"><strong>European standards, a recurring complaint</strong></div>
<p>Exporting to the European Union (EU) is complicated by agricultural legislation and regulations that also apply to imported products.</p>
<p>&#8220;<strong>Iranian companies do not have the capacity to comply with European standards. It is difficult: that is why they repackage there and sell it with their own packaging,&#8221; </strong>he told Efe Rasul Sabaghzadeh, director of the Iranian saffron packaging company Sabaghzadeh.</p>
<p>Among the European countries that do this business with Iranian saffron, Spain stands out, considered a major exporter worldwide, but which sells mainly &#8220;red gold&#8221; of Iranian origin bought in bulk, since its local production covers only a small part.</p>
<p><strong>Sabaghzadeh explained that his company exports each year 20 tons of saffron</strong>, generally in packages of 500 grams, to Spain, where the packaging is changed and sold to other countries under a different brand.</p>
<p>In her company, located in Mashad, dozens of women cleaned the saffron threads delicately, separating them with tweezers, for their later packaging and sale.</p>
<div class="ladillo"><strong>A solution: products with added value  </strong></div>
<p>To try to improve their income and increase consumption of this spice, Iranian producers of saffron have mobilized to present in the coming years secondary products.</p>
<p><strong>&#8220;We have strengthened at the scientific level the development and innovation sector of our work to achieve products with greater added value,&#8221;</strong> said the head of Novin Saffron.</p>
<p>Currently in Iran, in addition to the use of saffron threads in rice and stews, there is a wide variety of food products flavored with saffron: flour for batter and to prepare cakes and desserts, infusions and sugars, among others.</p>
<p><strong>Shariatí predicted that if these secondary products are promoted and the packaging is improved, &#8220;effects will be seen in the next two years&#8221; </strong>and exports will double, largely to East Asia.</p>
<p>In addition to these changes, Iran is working on the quality of saffron to enter the organic market and be able to supply 50% of the demand from EU countries in about three years.</p>

<p style="text-align: justify;"><b>1. Boosts Cardiovascular Health</b></p>
<p style="text-align: justify;">Recent studies have shown great promise of saffron constituents in the promotion of a healthy cardiovascular system. Heat shock proteins (HSPs) 27, 60 and 70 in particular were significantly linked to <a href="https://draxe.com/metabolic-syndrome/" target="_blank" rel="noopener noreferrer nofollow"><strong>metabolic syndrome</strong></a>and <a href="https://draxe.com/arteriosclerosis/" target="_blank" rel="noopener noreferrer nofollow"><strong>atherosclerosis</strong></a> so researchers wanted to investigate the effect of this herb on antibody titers to HSP in patients with metabolic syndrome.</p>
<p style="text-align: justify;">The levels of heat shock proteins 27, 60, 65 and 70 were measured in a study published in the <em>Journal of Complementary &amp; Integrative Medicine</em> during supplementation, with 105 participants diagnosed with metabolic syndrome. The participants were randomly divided into two groups and were given either 100 milligrams a day of a placebo or saffron. After three months, the antibodies to heat shock proteins 27 and 70 were reduced greatly in the saffron group. (<a href="https://www.ncbi.nlm.nih.gov/pubmed/24501162" target="_blank" rel="noopener noreferrer nofollow">1</a>)</p>
<p style="text-align: justify;"><b>2. Treats Erectile Dysfunction</b></p>
<p style="text-align: justify;"><a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3217797/" target="_blank" rel="noopener noreferrer nofollow">Erectile dysfunction</a> (ED) affects more than 150 million males throughout the world. In traditional medicine, saffron was used as an aphrodisiac, with the constituent crocin credited for its aphrodisiac activity.</p>
<p style="text-align: justify;">In a pilot study to evaluate this traditional use, 20 male participants with ED were evaluated for 10 days. Each morning, the participants took a tablet containing 200 milligrams of this spice. The participants underwent the nocturnal penile tumescence test and the international index of erectile function questionnaire (IIEF-15) at the start of supplementation and at the end of 10 days.</p>
<p style="text-align: justify;">After the 10 days of supplementation, there was a statistically significant improvement in tip tumescence and rigidity as well as base tumescence and rigidity. The ILEF-15 total scores were significantly higher in after participants were supplemented with this herb.  There was a positive effect on sexual function with increased duration and number of erectile events seen in men with erectile dysfunction only after taking it for 10 days. <p style="text-align: justify;">Cancer is considered to be the second leading cause of death in the world. Saffron as a medicinal plant is known for its anticancer capabilities, making it a potential <a href="https://draxe.com/10-natural-cancer-treatments-hidden-cures/" target="_blank" rel="noopener noreferrer nofollow"><strong>natural cancer treatment</strong></a>.</p>
<p style="text-align: justify;">In a randomized, double-blind clinical trial published in the <em>Avicenna Journal of Phytomedicine</em>, the effects of saffron on response to treatment in patients suffering from liver metastasis were evaluated. Thirteen participants suffering from liver metastases were included in this study and then divided into two different groups. Both groups received chemotherapy regimen. Participants in group 1 were treated with saffron capsule (50 milligrams, twice daily) during chemotherapy periods while group 2 received a placebo.</p>
<p style="text-align: justify;">A sum of the longest diameter was calculated and compared for all lesions in IV contrast CT scan before and after the treatment. Out of the 13 who participated, six quit and seven continued until the end. In the group treated with saffron, two participants showed partial and complete response (50 percent) whereas in placebo group, no response was seen. Also, two deaths in the placebo and one in saffron group occurred. This research suggests that saffron might be useful in patients suffering from liver metastasis and other cancers. (<a href="https://www.ncbi.nlm.nih.gov/pubmed/26468463" target="_blank" rel="noopener noreferrer nofollow">3</a>)</p>
<p style="text-align: justify;"><b>4. Alleviates Symptoms of PMS</b></p>
<p style="text-align: justify;">Premenstrual syndromes (PMS) are among the most common health problems reported by women, affecting 2o percent to 40 percent of women of reproductive age. Saffron is considered an excellent antispasmodic so researchers at the Tehran University of Medical Sciences’ Vali Asr Reproductive Health Research Center assessed whether it could alleviate symptoms of PMS. Women aged 20—45 years with regular menstrual cycles who experienced <a href="https://draxe.com/pms-symptoms/" target="_blank" rel="noopener noreferrer nofollow"><strong>PMS symptoms</strong></a> for at least six months were eligible for the study. Women were randomly assigned to either group A, who receive 15 milligrams of capsule saffron twice a day in the morning and evening or group B, who received a capsule placebo twice a day for a two menstrual cycles.</p>
<p style="text-align: justify;">The women were evaluated for PMS symptoms using a Premenstrual Daily Symptoms (PDS) questionnaire and Hamilton Depression Rating Scale (HAM-D). Results showed a significant improvement in both tests (PDS and HAM-D) for the women in the saffron group compared to their pre-treatment symptoms and also showed a significant improvement in symptoms compared to the placebo group. <p style="text-align: justify;"><b>5. Promotes Satiety and Weight loss</b></p>
<p style="text-align: justify;">In a Malaysian study, researchers wanted to investigate the <a href="https://draxe.com/satiety/" target="_blank" rel="noopener noreferrer nofollow"><strong>satiety</strong></a> property of saffron. Women participants were given a capsule of Satiereal twice daily or an inactive placebo with no restrictions in dietary intake. After two months, the participants using the saffron extract reported a decrease in snacking and lost more weight than the control group. <p style="text-align: justify;">Depression is a serious disorder in today’s society with estimates of lifetime prevalence as high as 21 percent of the general population in some developed countries. As a therapeutic plant, saffron was used for depression in Persian traditional medicine, and researchers wanted to assess the efficacy this herb in the treatment of mild to moderate depression in a six-week clinical trial.</p>
<p style="text-align: justify;">Thirty adult outpatients who met the clinical interview for depression participated in the trial. Participants had a baseline Hamilton Rating Scale for Depression score of at least 18. In this double-blind, single-center trial, participants were randomly assigned to receive a capsule of saffron (30 milligrams a day) in group 1 or a capsule of the antidepressant <a href="https://www.drugs.com/cdi/imipramine.html" target="_blank" rel="noopener noreferrer nofollow">imipramine</a> (100 milligrams per day) in group 2 for a six-week study. Saffronat this dose was found to be effective in a similar manner to imipramine in the <a href="https://draxe.com/natural-remedies-depression/" target="_blank" rel="noopener noreferrer nofollow"><strong>treatment of mild to moderate depression</strong></a>. As a result, the supplementation of saffron had a significant effect on the BDI and BAI scores in comparison to placebo during 12 weeks.
