Saffron Production and Supply Sources

The Persian Gulf region primarily imports saffron from Iran, which is the world’s largest saffron producer. The unique climate and soil in regions like Khorasan Province in northeastern Iran create ideal conditions for cultivating high-quality saffron with a distinct flavor, aroma, and color. While other countries such as Spain and Afghanistan also produce saffron, Iranian saffron is widely regarded as superior in quality and is the preferred choice in the Gulf.

Varieties and Quality of Saffron

Sargol: Known for its pure red stigma without yellow style, Sargol is considered high quality due to its potency and deep red color. It is highly valued in Gulf markets for its vibrant color and strong aroma.

Negin: This variety is longer and thicker than Sargol, with a full red color and no yellow strands, making it one of the most expensive and sought-after types in the region.

Pushal: Pushal contains a small portion of yellow style along with the red stigma, making it slightly lower in quality than Negin and Sargol. It’s more affordable and popular among households.

Super Negin: This is a premium variety known for its thicker, more aromatic strands. Due to its high concentration of safranal, crocin, and picrocrocin compounds, it provides vibrant color and intense flavor, which are highly valued in the Gulf market.

Economic Importance of Saffron in the Persian Gulf

Saffron plays a significant economic role for both importing countries in the Gulf and producing countries like Iran. For Iran, saffron exports are a critical source of foreign exchange revenue, while Gulf nations contribute a substantial portion of the demand due to the herb’s cultural importance and high standard of living.

Employment and Agricultural Income: In Iran, saffron farming creates extensive employment opportunities in rural areas, as it is a labor-intensive crop. Harvesting saffron requires handpicking each flower to collect the delicate stigmas, creating jobs in farming, processing, packaging, and exporting sectors.

Import Markets in the GCC: The high demand in countries like the UAE, Saudi Arabia, and Kuwait reflects both consumer and cultural preferences. Saffron imports contribute to economic activities through the wholesale and retail markets, where it is sold as a luxury item, an ingredient in traditional dishes, or used for medicinal and cosmetic purposes.

Re-Exporting Hub: The UAE, specifically Dubai, serves as a significant re-export hub for saffron in the region. Due to its free trade zones and strategic location, the UAE imports saffron for local consumption and re-exports it to neighboring countries in the Middle East, Africa, and Asia.

Cultural and Traditional Significance of Saffron

Culinary Uses: Saffron is a key ingredient in traditional Persian Gulf dishes, including rice dishes, stews, and desserts. In Saudi Arabia and the UAE, it is used in famous dishes like kabsa, majboos, and sweets such as halwa. Its vibrant color, unique aroma, and subtle flavor add a luxurious touch to culinary traditions.

Religious and Cultural Celebrations: Saffron is often used in celebratory dishes and desserts during events like Ramadan and Eid. Its association with prosperity and auspiciousness makes it a favored ingredient during festivals and special gatherings.

Medicinal Uses and Wellness: Known for its medicinal properties, saffron is used in traditional medicine for its purported anti-inflammatory, antioxidant, and mood-enhancing properties. In recent years, the rising interest in health and wellness has increased saffron’s demand as a functional food.

Trade Practices and Saffron Market Dynamics

Import and Distribution Channels: Saffron enters the Gulf region primarily through imports from Iran, Afghanistan, and sometimes Spain. Distributors import saffron either in bulk for repackaging or as packaged products. Wholesale markets and specialty stores in cities like Dubai, Riyadh, and Doha are significant distribution centers, where high-quality saffron is sold in small quantities to ensure freshness.

Pricing and Quality Control: Saffron’s price fluctuates based on its quality, which is determined by the length, color, and aroma of the threads. Due to the high price of authentic saffron, quality control is stringent, with imports often undergoing certification and testing to verify authenticity and adherence to food safety standards.

Customs Regulations and Tariffs: The Gulf countries impose various import tariffs and quality checks on saffron to prevent adulteration, which is a common issue with high-value spices. The UAE’s free trade zones and efficient customs processes make it a prime entry point for saffron destined for GCC markets.

Counterfeit Prevention: Given saffron’s high price, counterfeiting and adulteration are concerns. Some importers and retailers use laboratory testing and certified labeling to guarantee authenticity. Regulations in GCC countries, particularly the UAE and Saudi Arabia, are increasingly stringent to combat these issues.

Factors Affecting Saffron Demand and Supply in the Persian Gulf

Climate Conditions and Harvesting: The production of saffron is limited by specific climatic needs, with each stigma being hand-harvested. Weather variations, droughts, or floods can significantly affect the supply and quality, leading to price volatility in the Gulf market.

Political Relations and Sanctions: Sanctions on Iran can affect saffron availability and prices in the Gulf region. Trade restrictions may lead to delays, limited supply, or reliance on other sources, impacting consumers and businesses in GCC countries.

Rising Health Consciousness: With a growing focus on health and wellness, the demand for saffron as a functional food is on the rise. Gulf consumers are increasingly using saffron in health supplements, skincare, and wellness products, further driving demand.

Seasonal Demand and Cultural Practices: Demand for saffron peaks during Ramadan, Eid, and other cultural celebrations, where it is used in festive cooking and gifts. This seasonal increase in demand impacts prices and availability.

Market Competition: While Iranian saffron dominates, Spanish and Afghan saffron are gaining popularity, with some consumers preferring their specific characteristics. This competition introduces pricing and variety options for Gulf consumers.

Challenges and Opportunities in the Saffron Market

Environmental Sustainability: Water-intensive saffron farming in Iran faces challenges due to water scarcity, droughts, and environmental degradation. Sustainable farming practices, such as improved irrigation and soil conservation, are becoming more critical for maintaining saffron production.

Consumer Education: Educating consumers on identifying pure saffron and understanding its health benefits is essential to combat counterfeit products. Retailers in the Gulf are increasingly offering information on quality indicators and certifications to assure authenticity.

Expanding Consumer Market: As Gulf nations experience population growth and increased diversity due to expatriate communities, the demand for saffron is expanding. Saffron is being incorporated into various cuisines and products beyond traditional dishes, creating new market opportunities.

Price Fluctuations: Saffron prices are subject to fluctuations due to seasonal availability, political factors, and consumer demand, making it a challenging market for both suppliers and consumers. Stable trade agreements and sustainable practices may help mitigate some of these challenges.

Conclusion

The saffron market in the Persian Gulf is driven by high demand, cultural significance, and the region’s economic prosperity. As the world’s leading saffron producer, Iran has a significant role in meeting the Gulf’s demand for premium saffron, though other sources are emerging. The market faces challenges related to environmental sustainability, political relations, and counterfeiting, but there are significant opportunities for growth, especially as consumer interest in health and wellness continues to rise. By balancing quality control, sustainable practices, and consumer education, the saffron trade in the Persian Gulf region is well-positioned for continued growth and success.

Iranian saffron is often considered the best in the world due to a combination of climate, cultivation techniques, and the saffron’s chemical composition. Let’s dive deeper into each of the elements that make it superior, especially when compared to Spanish and Afghan saffron:

1. Climate and Soil in Iran

Iran’s Khorasan region, which produces the bulk of the country’s saffron, offers optimal growing conditions. The climate is characterized by hot, dry summers and cold winters, which are essential for the saffron crocus to thrive. The high altitudes and well-drained soils further contribute to saffron’s potency by enhancing the concentration of crocin, safranal, and picrocrocin, the three main compounds responsible for saffron’s intense color, aroma, and taste. These elements give Iranian saffron a stronger flavor profile and deeper color when compared to saffron grown in other regions.

In comparison, Spanish saffron is predominantly grown in Castilla-La Mancha, where the climate is milder. While Spain is known for the “La Mancha” variety, which carries a high level of aroma, its crocin concentration is generally lower, giving it a lighter color than Iranian saffron. Afghan saffron, grown in similar arid conditions to Iran, is also high in quality, but Afghan production still lacks the consistency and scale seen in Iran.

2. Labor-Intensive Harvesting Process

Iran’s saffron is harvested by hand, with each flower’s stigma meticulously removed early in the morning to avoid damage from sunlight. This manual process ensures that the stigmas are not damaged or contaminated during harvest. The intense labor, which can involve harvesting over 170,000 flowers to produce just one kilogram of saffron, is a reflection of the care and tradition involved in Iranian saffron farming.

In contrast:

Spanish saffron is also hand-picked, but often in smaller-scale operations due to Spain’s limited saffron-growing regions. This contributes to its higher cost, even though the overall flavor and potency might not match Iran’s standards.

Afghan saffron is also hand-harvested but doesn’t yet have the widespread, well-established infrastructure or the centuries-old experience of Iran.

3. Higher Potency and Chemical Composition

Iranian saffron consistently ranks highest in the three main chemical markers of saffron quality:

Crocin: Responsible for the deep red color and antioxidant properties.

Picrocrocin: Gives saffron its characteristic bitter taste.

Safranal: Produces the distinct aroma saffron is known for.

Compared to Spanish saffron, Iranian varieties have been found to have a higher concentration of these compounds, especially crocin, which explains why Iranian saffron is more vividly colored and why a smaller amount is needed to achieve the desired effects in cooking. Spanish saffron, by contrast, tends to have a milder flavor, often requiring larger quantities for the same effect. Afghan saffron is closer to Iranian saffron in terms of chemical potency but lacks the consistency in testing and certification that makes Iranian saffron a global favorite.

4. Production Scale and Affordability

Iran produces over 90% of the world’s saffron, giving it a clear advantage in terms of availability and price. Large-scale production allows Iranian saffron to be sold at competitive prices without compromising quality. This gives it a significant edge over other producers. In contrast, Spanish saffron is produced in much smaller quantities, making it rarer and more expensive. Afghan saffron, although high in quality, is produced in even smaller amounts and is more costly to export due to infrastructural challenges.

5. Purity and Global Standards

Iranian saffron is subject to rigorous testing to ensure its purity. The saffron sold in global markets is often certified with ISO 3632 standards, a quality benchmark that measures the chemical composition of saffron. Iranian saffron typically scores higher than saffron from other regions in these tests. While Spanish saffron is also known for quality, it sometimes includes more yellow or white threads (styles), which dilute its purity(Institute of Culinary Education).

6. Cultural and Historical Expertise

Iran has been cultivating saffron for over 3,000 years. This rich history means that farmers have a deep understanding of how to grow, harvest, and process saffron to ensure the highest possible quality. The knowledge passed down through generations allows Iranian saffron to maintain its superior status. While Spanish saffron has a historical reputation in Europe, it doesn’t have the same global influence as Iran. Similarly, Afghan saffron is still developing its market and doesn’t yet have the centuries of experience to match Iran’s expertise(Illinois Extension)(Rossin Engineering).

Conclusion:

In sum, Iranian saffron is the global leader due to a combination of perfect growing conditions, centuries-old expertise, superior chemical composition, and large-scale production. Compared to Spanish saffron, which is lighter in color and less potent, and Afghan saffron, which lacks the global reach and consistency, Iranian saffron remains the preferred choice for chefs, consumers, and industries worldwide. Its rich color, intense flavor, and affordability make it unparalleled in the global market.

Pushali saffron is one of the types of saffron commonly used for various purposes. The three red stigma threads, the purple petal, and the stem are the main components of saffron. If during the separation of the saffron stigma, the orange part and the white thread are separated by about one to three millimeters, this saffron is considered Pushali saffron. The white part of the stigma also possesses many beneficial properties.

Pushali saffron contains more stigma threads, giving it a color strength of between 170 to 250 units. The presence of the yellow part in saffron is an indicator of its authenticity. Therefore, the connection of the stigma to the style is considered one of the most important signs of genuine saffron. Many people believe that this feature ensures the health and integrity of the saffron threads, which is why this type of saffron has many enthusiasts.

Types of Pushali Saffron

Pushali saffron comes in different types. Various factors such as the size, the amount of style attached to the stigma, and the curvature of the stigma play a direct role in the classification of this product.

Pushali “Ghalamdar” Saffron

This product is recognized as one of the finest and best types of Pushali saffron. Farmers and locals often refer to this type of saffron as “Sargol.” The stigmas in this type of saffron are long, straight, and thick, resulting in less curvature compared to similar products. The color strength and dyeing power of this product are exceptionally high and remarkable. The threads in this type are thicker, and the amount of style (yellow part) is less. This product is considered a premium grade of Pushali saffron.

Characteristics of High-Quality “Ghalamdar” Saffron

This type of saffron consists of separate pieces. The white end of the stigma is visible among the saffron threads. The stigma of Pushali “Ghalamdar” saffron is notably thick. This type of saffron is free of curvature, appearing like a tightly bound bundle. It is highly colorful, fragrant, and possesses other desirable qualities.

Regular Pushali Saffron

Regular Pushali saffron is characterized by a higher amount of style (yellow part) and curled stigmas. The stigmas in this type of saffron have a normal thickness. Although it is of better quality than weak saffron, it lacks the superior quality and grade of “Ghalamdar” saffron.

Weak Pushali Saffron

This category of saffron features thin, brittle, and very weak stigmas. Factors such as a weak saffron bulb, poor soil conditions, insufficient water, and other environmental issues contribute to the brittleness of the stigmas. Sometimes, saffron may be watered after the optimal time, which also leads to a decline in quality.

Uses of Pushali Saffron

Pushali saffron is more affordable compared to other similar products, making it widely used for cooking sweets, food preparation, and more. Restaurants frequently use this type of saffron in cooking rice and various dishes.

Various factories use Pushali saffron in the production of saffron-based syrups. The production of saffron ice cream is also common in factories. Additionally, factories producing sugar candies, rock candy, nougat, and traditional sweets like “sohan” extensively incorporate Pushali saffron into their products. Household kitchens, take-out food shops, and similar establishments also use saffron in the preparation of food, desserts, and other dishes.

Pushali Saffron and Its Benefits

One of the most significant advantages of Pushali saffron is its easy identification compared to other types of saffron. The presence of the style (yellow part) in this type of saffron is easily recognizable, making it simple for everyone to confirm its authenticity and confidently purchase it. In addition to its ease of identification, Pushali saffron offers several other benefits.

High Coloring Power: This product has strong coloring capabilities due to the high percentage of red stigmas.

Comprehensive Properties: Pushali saffron retains all the benefits of the complete saffron thread because it still includes part of the style.

Increased Stigma Presence: The higher number of stigmas in Pushali saffron can enhance its coloring strength to up to 250 units.

Consumer Confidence: Due to these benefits, many people purchase Pushali saffron with confidence.

Affordable Price: The price of this type of saffron is lower than other varieties, making it an economical choice for many consumers.

What is Negin Saffron?

One of the types of saffron is Negin saffron, the most beautiful variety among the different kinds. The thicker the threads, the higher its price, and it may be upgraded to the name Super Negin. To identify this type of saffron, it is essential first to recognize its physical appearance, so that you can easily identify it when necessary. Typically, due to its high quality, this type of saffron holds significant value. Additionally, Negin saffron has many medicinal properties.

In general, what differentiates various types of saffron, such as Negin saffron, Dokhtar Pich saffron, and other types, is the way the stigmas are separated. In fact, the cultivation method for all types of saffron is similar, and the differences stem from the drying and cleaning processes. Negin saffron usually refers to saffron where, during the cleaning process, the three stigmas are completely separated from the white (root) and orange (style) parts. Moreover, it should contain no color other than red. The thicker and larger the stigmas, the greater its coloring power, and the more attractive its appearance.

Certainly, it is important to note here that the thicker the saffron stigmas, the more likely it is that a significant amount of chemical fertilizers were used during its cultivation.

Types of Negin Saffron

Negin saffron is divided into various types based on its production method, which include:

Super Negin Saffron

One of the types of Negin saffron is Super Negin saffron. This product is one of the highest quality and best saffrons available. It is considered the “passport” of saffron in the world. Compared to other types of saffron, this variety has a higher quality and price.

This type of saffron has excellent coloring quality and a beautiful appearance. Therefore, it is an excellent choice for export to countries like India, China, and Japan, and in general, to Asian countries.

Grade 2 Negin Saffron

This type of saffron, among the Negin varieties, is considered to have medium to high quality. It is also very suitable for export.

Pressed Negin Saffron

The difference with this type of saffron lies in its drying method. If the tips of the stigmas are flattened or shaped like a sword due to physical pressure or air force, this type of saffron is produced. Pressed Negin saffron has recently become very popular and is commonly used for export.

Semi-Negin Saffron

Another type of Negin saffron is Semi-Negin saffron. This saffron has lower quality compared to other types of saffron. However, an important point about it is its reasonable price. Therefore, this type of saffron is recommended for categorization purposes.

Difference Between Negin and Sargol Saffron

Distinguishing Negin saffron from Sargol saffron is quite difficult for the average person because these two products are very similar. The main difference is that Negin saffron stigmas are thick and large, smooth, without any curling, and unbroken, with all stigmas being uniformly thick and robust. On the other hand, Sargol saffron stigmas are shorter, may have slight curling, and can sometimes be broken. Additionally, Sargol stigmas vary in thickness.

Characteristics of Negin Saffron

This type of saffron is known for its stunning appearance and remarkable aroma. It is considered the most attractive type of saffron. The key characteristics of Negin saffron include:

The stigmas are completely separated from each other.

It has a uniform, vibrant red color and a strong aroma.

The threads are thick.

The stigmas are arranged neatly and consistently.

It has a very high fragrance.

What is Pressed Negin Saffron?

Pressed Negin saffron refers to thin, brittle saffron that is carefully preserved due to its delicate nature. Farmers typically harvest saffron flowers, not the saffron itself, as each flower contains three saffron stigmas that must be separated from the flower.

Saffron retains moisture while still in the flower, making it unusable at this stage. Therefore, after separating the saffron from the flower, it needs to be dried. Various methods, such as manual and mechanical drying, are used.

If Negin saffron is dried manually, the process may result in some curling of the saffron threads, as the manual process might not produce completely straight threads. (Straightness is a significant criterion for exports to some countries like China). As a result, machines and systems are often used for drying saffron. Saffron dried with these systems usually has a straighter and more attractive appearance, referred to as Pressed Negin saffron.

Is Negin Saffron Better Than Sargol?

Negin saffron is widely recognized as the most beautiful saffron in the world and is of superior quality. Given its characteristics, it is considered better than Sargol saffron. It is also worth mentioning that due to its higher quality, Negin saffron is more valuable and commands a higher price than Sargol saffron.

In the realm of spices, few ingredients evoke such allure and mystique as saffron. Revered for its exquisite fragrance, vibrant color, and reputed health benefits, this culinary treasure has captivated the hearts and palates of discerning individuals for centuries. And among the world’s producers of saffron, Iran stands out as the undisputed maestro, cultivating saffron of unparalleled quality and finesse.

A Legacy Steeped in History and Tradition

The cultivation of saffron in Iran dates back to ancient times, with its origins shrouded in legend and lore. Some accounts trace its introduction to the Persian Empire by Cyrus the Great, while others attribute its arrival to the Phoenician traders who traversed the Silk Road. Regardless of its precise origins, saffron has become deeply intertwined with Iranian culture and cuisine, playing a pivotal role in traditional medicine and celebrations.

The Treasured Crocus Sativus

The source of this culinary gem is the Crocus sativus flower, a delicate purple bloom that produces three crimson-red stigmas, the precious threads that constitute saffron. Each flower yields only three stigmas, making the harvesting process incredibly labor-intensive and contributing to saffron’s reputation as the world’s most expensive spice.

Unveiling the Essence of Iranian Saffron

Iranian saffron distinguishes itself from its counterparts worldwide due to several factors:

Ideal Climate and Soil Conditions: Iran’s unique geographical location, characterized by hot, dry summers and cold winters, along with its fertile soils, provides the perfect environment for crocus cultivation.

Traditional Cultivation Practices: Over centuries, Iranian saffron farmers have perfected traditional cultivation practices, ensuring the preservation of the flower’s delicate nature and maximizing its quality.

Commitment to Quality: Iranian saffron producers are renowned for their unwavering commitment to quality, adhering to strict standards and employing meticulous harvesting and processing techniques.

A Symphony of Flavors and Culinary Versatility

A Treasury of Health Benefits

Iranian saffron is under serious threat as a result of US sanctions, which have led to this valuable spice, known as “red gold”, being smuggled into Afghanistan.

The obstacles created to the transport system and banking transactions for the export of Persian products, including saffron, are linked to the sanctions imposed by the United States on Iran in 2018, after Washington withdrew from the nuclear agreement.

“The unilateral sanctions on the Iranian economy have had a very negative effect on the activity of producers and exporters in the agricultural sector due to the limitations on foreign currency transactions,” lamented Ali Sharyatí, president of the Agriculture Commission of the Iranian Chamber of Commerce, in statements to Efe.

Added to this is the consequent devaluation of the national currency, the rial, which led the Iranian authorities to apply a restrictive regulation on foreign exchange, detrimental to exporters, some of whom have opted for smuggling to increase their income.

“The existing foreign currency laws in the country have caused [saffron] to be smuggled into Afghanistan and exported from there,” Shariati said about the current situation of “red gold,” of which Iran is the world’s biggest producer.

AP/EBRAHIM NOROOZI-Iranian farm workers separate crimson stigmas from purple flowers in the courtyard of a house on the outskirts of the city of Torbat Heydariyeh in south-eastern Iran

“A serious threat”

The also president of the board of directors of the Saffron Export Development Fund explained that previously the saffron bulb was already being smuggled to Afghanistan to be cultivated there, but in the last two years, as a result of the sanctions, this illegal trade is being carried out with the flower’s own threads.

Only between March 2019 and March 2020 (the year 1398 in the Persian calendar), 50 tons of Iranian saffron were smuggled into Afghanistan, according to Shariatí who called this situation a “serious threat” to the local market for this exquisite product.

With an annual production of about 500 tons, Iranian saffron is equivalent to more than 90% globally, but farmers and exporters do not get as much profit as they should.

“The smuggling of any product harms the healthy commercial activity of the country because the demand for companies working within the legal framework is transferred to this irregular sector and prices are reduced,” said Shariatí, who is also responsible for the largest saffron processing and packaging company in Iran, Novin Saffron, based in the northeastern city of Mashad.

About Afghanistan, he added that in that country only 17 to 20 tons of “red gold” are produced, but “there the saffron that arrives from Iran is packed as if it was of Afghan origin and it is exported to different countries of the world like India and USA”.

Previously, within a legal framework, the main buyers of Iranian saffron were Spain and the United Arab Emirates, which have been joined more recently by Hong Kong and Vietnam, from where it is exported to China.

AP/EBRAHIM NOROOZI –Saffron flower market in the city of Torbat Heydariyeh, north-east Iran

European standards, a recurring complaint

Exporting to the European Union (EU) is complicated by agricultural legislation and regulations that also apply to imported products.

“Iranian companies do not have the capacity to comply with European standards. It is difficult: that is why they repackage there and sell it with their own packaging,” he told Efe Rasul Sabaghzadeh, director of the Iranian saffron packaging company Sabaghzadeh.

Among the European countries that do this business with Iranian saffron, Spain stands out, considered a major exporter worldwide, but which sells mainly “red gold” of Iranian origin bought in bulk, since its local production covers only a small part.

Sabaghzadeh explained that his company exports each year 20 tons of saffron, generally in packages of 500 grams, to Spain, where the packaging is changed and sold to other countries under a different brand.

In her company, located in Mashad, dozens of women cleaned the saffron threads delicately, separating them with tweezers, for their later packaging and sale.

A solution: products with added value

To try to improve their income and increase consumption of this spice, Iranian producers of saffron have mobilized to present in the coming years secondary products.

“We have strengthened at the scientific level the development and innovation sector of our work to achieve products with greater added value,” said the head of Novin Saffron.

Currently in Iran, in addition to the use of saffron threads in rice and stews, there is a wide variety of food products flavored with saffron: flour for batter and to prepare cakes and desserts, infusions and sugars, among others.

Shariatí predicted that if these secondary products are promoted and the packaging is improved, “effects will be seen in the next two years” and exports will double, largely to East Asia.

In addition to these changes, Iran is working on the quality of saffron to enter the organic market and be able to supply 50% of the demand from EU countries in about three years.

In an interview with Tehran-based English newspaper, Iran Daily, Gholamreza Miri added Iran produced saffron valued at $373.33 million in the year to March 2018.

He noted that according to figures released by Iran’s Agricultural Jihad Ministry, Iran produced 336 tons of saffron in the year to March 2018.

Miri said in this period, saffron was sold at about $1,111 per kilogram in domestic and foreign markets.

He put the area of land under saffron cultivation in Iran at 125,000 hectares in the same time-span, adding this area has increased by 20 percent since March 20, 2018.

Miri said a number of measures have been taken to boost efficiency and productivity in domestic saffron production including leveling the farmlands and improving their quality, using suitable fertilizers, planting bigger saffron corms and applying more effective irrigation systems.

These measures, he added, have helped increase average saffron production, noting thanks to these measures, Iran’s average saffron production is expected to reach 4.5 kilograms per hectare in the year to March 2019, from 3.5 kilograms in the previous 12 month period.

‘Thus, Iran’s saffron production is expected to rise 15 percent by March 2019.’

He said according to unofficial figures, domestic saffron output, which reached 450 tons in the 12-month period ending March 2018, will amount to 500 tons by March 2019.

Saffron harvest begins as of October 17, Miri said, adding since the crop grows on a daily basis in the form of flower, it not very much possible to estimate or predict the amount of its annual output in advance.

‘Some 75 percent of Iran’s saffron output is exported and the rest is sold in domestic markets.’

He said currently, Iran exports saffron to 47 countries including the UAE, Spain, China, Hong Kong, India, Germany and France as well as the Persian Gulf littoral states.

‘Iran is pragmatically unrivalled in the world in saffron production. Spain, which is deemed Iran’s rival in this field in global market fails to produce more than one ton of the product per annum. However, this country has managed to gain a major share of global saffron markets by importing, packaging and re-exporting Iranian saffron.

‘Thanks to the cheap facilities and loans they receive from their banks, Spanish companies purchase Iranian saffron in bulk and store in their depots.’

Miri said they, then, give their international customers the guarantee that, given the stability of foreign currency and monetary market in the country, they will be able to meet their saffron demand within a year at a fixed price.

This comes as, he regretted, ‘We fail to provide our customers with such a guarantee due to the current condition of Iran’s foreign currency market.’

Exports of 236 tons of the most expensive spice in the world known as red gold showed Iran is far from giving up its dominant position as a producer which usually accounts for about 90 percent of world saffron output, Press TV reported.

Sales during the year to March 20 rose 55 percent against the previous year, said the head of Agriculture, Water and Food Industries Commission with Tehran Chamber of Commerce, Industries, Mines and Agriculture Kaveh Zargaran.

Iran exports saffron to some 20 countries but about 77 percent of the shipments go to Hong Kong, Spain and the United Arab Emirates “which shows we have not been successful in gaining a better share of the global market”, he said.

Experts have long said Iran has to improve marketing and find new customers if it wants to secure a bigger share of profits from saffron sales.

Bulk production methods in Iran fetch less than what is paid in countries such as Spain which reexport the Iranian produce.

Saffron from Spain reportedly sells for €1,400 ($1,861) per kilogram in Europe, but Iranian varieties command a quarter or less of that price.

“Countries like Spain, while being a major importer of saffron from our country, are among the largest exporters of this product in the world,” Zargaran said.

“Our neglect of the market needs has caused us to lose the packaged saffron market to countries like Spain, and despite our first rank in saffron production and export, bulk exports bring in lower value added,” he said.

Iran’s position as the lead supplier of the spice is also being challenged by counterfeit business under which genuine saffron from the country is adulterated and resold to the high-end global market, with the UAE and Spain being the prime suspects.

Saffron cultivation and harvest is a painstaking process which requires 200,000 strands of crimson crocus blooms to be gingerly picked in the morning to make one kilo for sale.

Much of the crop produced by villagers are bought at knockdown prices by local dealers who themselves sell it to foreign buyers in large stocks. This means the bulk of the value-added accrues to foreign intermediaries, while the genuine produce barely reaches the end consumer.

Saffron cultivation has a history of more than 3,000 years in Iran, where the reddish, aromatic substance is used to flavor food and pastries, with further application in medicine and cosmetics.

Iranian researchers have produced saffron extract for suppressing cancer, lowering blood pressure and curing depression.
