In an interview with Tehran-based English newspaper, Iran Daily, Gholamreza Miri added Iran produced saffron valued at $373.33 million in the year to March 2018.

He noted that according to figures released by Iran’s Agricultural Jihad Ministry, Iran produced 336 tons of saffron in the year to March 2018.

Miri said in this period, saffron was sold at about $1,111 per kilogram in domestic and foreign markets.

He put the area of land under saffron cultivation in Iran at 125,000 hectares in the same time-span, adding this area has increased by 20 percent since March 20, 2018.

Miri said a number of measures have been taken to boost efficiency and productivity in domestic saffron production including leveling the farmlands and improving their quality, using suitable fertilizers, planting bigger saffron corms and applying more effective irrigation systems.

These measures, he added, have helped increase average saffron production, noting thanks to these measures, Iran’s average saffron production is expected to reach 4.5 kilograms per hectare in the year to March 2019, from 3.5 kilograms in the previous 12 month period.

‘Thus, Iran’s saffron production is expected to rise 15 percent by March 2019.’

He said according to unofficial figures, domestic saffron output, which reached 450 tons in the 12-month period ending March 2018, will amount to 500 tons by March 2019.

Saffron harvest begins as of October 17, Miri said, adding since the crop grows on a daily basis in the form of flower, it not very much possible to estimate or predict the amount of its annual output in advance.

‘Some 75 percent of Iran’s saffron output is exported and the rest is sold in domestic markets.’

He said currently, Iran exports saffron to 47 countries including the UAE, Spain, China, Hong Kong, India, Germany and France as well as the Persian Gulf littoral states.

‘Iran is pragmatically unrivalled in the world in saffron production. Spain, which is deemed Iran’s rival in this field in global market fails to produce more than one ton of the product per annum. However, this country has managed to gain a major share of global saffron markets by importing, packaging and re-exporting Iranian saffron.

‘Thanks to the cheap facilities and loans they receive from their banks, Spanish companies purchase Iranian saffron in bulk and store in their depots.’

Miri said they, then, give their international customers the guarantee that, given the stability of foreign currency and monetary market in the country, they will be able to meet their saffron demand within a year at a fixed price.

This comes as, he regretted, ‘We fail to provide our customers with such a guarantee due to the current condition of Iran’s foreign currency market.’

It’s the poshest spice of all, often worth its weight in gold. But saffron also has a hidden history as a dye, a luxury self-tanner, and even a serotonin stimulant. That’s right, this episode we’re all about those fragile red threads plucked from the center of a purple crocus flower. Listen in as we visit a secret saffron field to discover why it’s so expensive, talk to a clinical psychologist to explore the science behind saffron’s reputation as the medieval Prozac, and explore the spice’s off-menu role as an all-purpose beautifier for elites from Alexander the Great to Henry VIII.

Saffron’s origins are a mystery, with competing claims placing the wild plant’s origins in regions along a wide, semiarid swath from Greece, in the eastern Mediterranean, to Central Asia. Today, the vast majority is still grown in that belt, with Iran leading the world’s production. But in the 1500s and 1600s, the center of the saffron universe briefly shifted from the sun-baked Mediterranean to rainy England. One particular region of England became so internationally famous for its saffron—in fact, each autumn, the entire area was carpeted in purple petals—that the local market town of Chepying Walden changed its name to Saffron Walden. But by the 1800s, England’s saffron fields had vanished entirely. Two hundred years later, a restless geophysicist named David Smale decided to try cultivating English saffron again. This episode, we visit his field at a secret location in Essex to learn how saffron is grown, hand-harvested, and dried—and about Smale’s uphill battle to uncover the lost art of successfully coaxing saffron from England’s soggy soils.

Smale also told us that “crokers,” as people who harvest saffron are called, have to take a break during packing to avoid getting the giggles. “It’s got a distinctive smell,” said Smale. “It’s beautiful and it’s quite heady—you have to get fresh air every so often because it is a narcotic in big quantities.” It turns out saffron’s mood-altering reputation has some serious science—and some surprising history—behind it. To learn more, we talk with the clinical psychologist Adrian Lopresti, who’s studying saffron’s efficacy as an antidepressant. We also speak with the musicologist Volker Schier about the cache of letters he discovered, which reveal that medieval nuns were hooked on the stuff. “I call it singing under the influence,” Schier told us. The nuns each had their own stash, he said, which they’d take “if they needed it—as a stimulant.” Join us this episode for all this, plus the recipe for a golden swan, as we explore the secrets of saffron.

Saffron is the most expensive spice in the world, going for up to $16 per gram—and with good reason. It comes from the dried bright orange-red stigmas of the flower Crocus sativus.

But before you go digging up your spring crocus, know that this variety is special because it’s a triploid: it can’t grow in the wild or reproduce without human intervention. The gorgeous purple flower is painstakingly propagated and harvested by hand, and only on the morning it blooms. The more careful the cultivation, the higher the price.

Iran produces 85 percent of the world’s saffron, according to the UN Food and Agriculture Organization, thanks to its relatively dry, sunny climate and the agricultural knowledge passed down through generations of farmers. It likely was first discovered in Bronze Age Greece, yet it now grows throughout Europe and Asia.

Saffron is as old as time. Cleopatra was said to bathe in saffron-infused mare’s milk before seeing a suitor. “Saffron was used to dye the woolen bolero jackets worn by Minoan women; also in cosmetics, where it was mixed with red ochre, tallow, and beeswax to make lipstick,” says John O’Connell in The Book of Spice: From Anise to Zedoary. Medieval monks found that mixing a primitive glue of egg whites and saffron created a yellow glaze that could stand in for gold in the production of their manuscripts.

And I dare you to make a Spanish paella or a Persian pilau without the metallic zing and dayglow yellow punch of saffron. Same for dozens of styles of fish stew, yeasted rolls, cakes, and pies found around the world.

Saffron has been used historically to treat everything from heartache to hemorrhoids by traditional healers. Modern studies have shown the high levels of antioxidants found in saffron may help ward off inflammation in the body and that it may be helpful in treating sexual dysfunction and depression, but the jury’s still out on its reported effects on cardiovascular disease and cancer.

Saffron was once spread like hay to freshen Roman public spaces and was even prescribed as an antidote for the bubonic plague, according to the beautifully illustrated The Herball, or Generall historie of plants, by John Gerarde, published in 1597.

Its popularity may have peaked in the Middle Ages as a medicine, but this was also a time when coloring food, particularly food for a feast, was in vogue. A recipe for swan from Le Viandier de Taillevent, a cookbook published in 1300, calls for a rather graphic skinning of the bird, then cooking it on a spit. Once the bird is on the fire, you must “glaze it with saffron; and when it is cooked, it should be redressed in its skin, with the neck either straight or flat. Endorse the feathers and head with a paste made of egg yolks mixed with saffron and honey.”

Saffron still evokes affluence and elegance in any dish. Luckily, a tiny bit goes a long way.

The most impressive health benefits of saffron include its ability to improve respiratory health, optimize the digestive system, eliminate pain, improve sleep patterns, reduce bleeding, boost heart health, increase circulation, prevent diabetes, strengthen bones, and improve the immune function.

What Is Saffron?

Saffron is a popular spice that can be acquired from a flower commonly called the saffron crocus. With the scientific name Crocus sativus, the stigmas of this plant can be dried and processed into a spice, which is actually the most valuable spice by weight. These “threads” as they are called, are typically reddish orange, the same color as the spice, and are carefully removed from flowers by hand. This herb is highly desired because of its ability to season and color food, as well as its inherent health benefits. The unique organic composition of saffron makes it a powerful addition to your diet, as it contains more than 150 volatile compounds, including carotenoids, safranal, crocin, antioxidants, and other biochemicals, as well as minerals and vitamins that are essential to human health.

The most common form of saffron is in the dried or powdered form, but you can also get saffron supplements at certain herbal food stores. Only a small amount of the spice is necessary to have an effect, and the maximum that should be consumed in a day is between 0.5 grams and 1 gram of this valuable spice. Saffron can be applied topically for massage, used in broths, hot drinks, or as pills. You can find saffron at most organic health stores and grocery stores, and the pill supplements can be found in herbalist and nutritional locations.

Health Benefits Of Saffron

Let’s take a closer look at this fascinating herb to uncover the many health benefits of saffron.

Boosts Immunity

Although people often think of spices as nothing but food flavoring tools, they still contain high concentrations of certain important nutrients, including vitamin C. Ascorbic acid is important for human health, as it stimulates the immune system’s production of white blood cells, the body’s first line of defense against illness, and also is crucial to the production of collagen, which is necessary for cellular production in the body and contributes to wound healing, muscle growth, blood vessel repair, and tissue production.

Increases Circulation

Saffron can function as an effective energy booster and can increase your metabolism by increasing your blood circulation. The high concentration of iron means that saffron increases your RBC, which thereby stimulates circulation and oxygenation of organ systems and the body’s extremities. This improves efficiency and functionality of our tissues and organ systems for healthier metabolic activity and prevents the symptoms of anemia.

Protects Heart Health

Improving the health of the heart seems to be one of the top goals in human health today, and one simple way to do this is to increase your potassium intake. Potassium acts as a vasodilator, effectively lowering the stress and pressure on blood vessels and arteries, allowing blood pressure to decrease and relieving strain on the cardiovascular system. This can prevent things like atherosclerosis, heart attacks, and strokes from occurring.

Controls Diabetes

The significant levels of manganese can help the body optimize its blood sugar levels. Diabetes is one of the most dangerous and widespread conditions in our world today, affecting millions of people globally. By regulating your blood sugar, insulin, and glucose levels, you can effectively prevent the onset of type II diabetes or manage the symptoms if you already suffer from this affliction.

Relieves Anxiety

Saffron has been known to relieve mild depression and improve mood in those who regularly consume it. The many active compounds in saffron have some effect on the endocrine system and can stimulate the release of beneficial hormones that keep us happy and healthy. For women, this same effect has also been known to act as an aphrodisiac. It has been hailed as a natural antidepressant by numerous research studies and organizations.

Improves Bone Strength

Some of the minerals and organic compounds in saffron have been linked to optimized nutrient uptake, particularly of calcium. By maximizing the amount of calcium that our body can absorb from food, we have a better chance of improving bone mineral density and preventing the onset of conditions like osteoporosis and other degenerative age-related diseases.

Improves Nerve Function

The vitamin B family is one that is often overlooked in human health, but it plays a major role in nerve function throughout the body. More specifically, the high content of vitamin B6 found in saffron spice can help our nervous system in running smoothly and prevent some of the deadly and dangerous disorders that arise from poor nervous system function.

Analgesic Qualities

Pain relief is always a valuable asset to an herb or natural remedy, and the volatile compound safranal in saffron acts as a sedative for many patients. This sedative action can help to relieve pain, reduce anxiety and stress, improve sleep patterns, and generally soothe the mind and body, which is always a good thing!

Prevents Cancer

With more than 100 different compounds acting within saffron’s complex form, antioxidants were bound to make an appearance. There are dozens of antioxidant compounds found in saffron, many of which seek out and neutralizefree radicals, the dangerous byproducts of cellular metabolism that can cause healthy cells to mutate or die. This boosts the general health of the immune system, but more specifically, can prevent cancer from developing or spreading in the body.

Reduces Stomach Disorders

One of the oldest and most well-known uses of saffron is for upset stomachs and excess flatulence. The sedative and anti-inflammatory nature of saffron helps to calm the stomach and reduce inflammation, which eases things like constipation, bloating, cramping, and serious conditions like gastric ulcers.

Treats Inflammation

As a topical tool used in massage, saffron oil and creams derived from the flower’s compounds can eliminate aches and pains throughout the body, while also relieving pain and discomfort. For people suffering from sports injuries, arthritis, gout, and other inflammatory conditions, this is a wonderful remedy. Also, for the topical healing of bruisesand wounds, the quick-acting antioxidant compounds can help to speed the healing process.

Word of Caution: Consuming saffron in high doses can be potentially dangerous, as the high concentration of active ingredients can have a range of effects on the body. However, in small doses (such as in meals or in pill supplement form), saffron is not known to have any common side effects or allergenic properties. Some side effects that have been reported include dry mouth, dizziness, nausea, anxiety, fatigue, and appetite changes, but these are rare. As always, consult a medical professional or trained herbalist before adding a powerful new element to your herbal regimen.
