Kaleh Ghoochi pistachio is a prized variety of Iranian pistachio renowned for its exceptional size and taste. This particular pistachio is spherical in shape, significantly larger than its counterparts, and belongs to the round pistachio category. It shares similarities with the Ohadi pistachio but is notably more substantial.

The weight of each fresh Kaleh Ghoochi pistachio is approximately 3.9 grams. When dried, each nut weighs around 1.5 grams. It’s important to note that over 50% of the total weight of a Kaleh Ghoochi pistachio is made up of its kernel.

Why is it Called Kaleh Ghoochi?

The name “Kaleh Ghoochi” is quite interesting. It originates from Rafsanjan, a region in Iran where this particular pistachio was first cultivated. In fact, it was thanks to the efforts of a man named Haji Ali Sherafi that this pistachio gained popularity, leading some to call it “Haji Sherafi pistachio.”

However, the real reason behind the name lies in the pistachio’s appearance. Its large, round kernels resemble the head of a ram (ghoochi is the Persian word for ram). This unique similarity is what gave the pistachio its distinctive name.

Interestingly, the Kaleh Ghoochi pistachio has a hard, slightly dull white shell and a dark red kernel. These characteristics further set it apart from other pistachio varieties.

Each nut is typically between 20 and 26 ounces. Akbari pistachios, on the other hand, are exceptionally long, slender, and large, with individual nuts ranging from 20 to 28 ounces. Kaleh Ghoochi trees bloom and mature later than other pistachio varieties, and even the smaller nuts have a sweet and delicious flavor.
