Production Process
Golden raisins are produced from a specific type of seedless grape with a yellow or golden color. After harvesting, the grapes are dried using specialized methods and then transferred to carbon dioxide chambers. Here, they are placed in wooden boxes on shelves. Sulfur is burned in a metal container, and the resulting sulfur dioxide fumigation gives the raisins their golden color. While this is a common method, traditional techniques also exist.
Types and Grading
Like other raisins, golden raisins are graded based on quality, with higher grades indicating superior quality. They are also categorized by size, with premium golden raisins typically measuring 9-12 or 10-12 millimeters. Larger raisins, often 14-24 millimeters, are preferred for export markets due to their visual appeal and perceived quality.
Premium Golden Raisins
Premium golden raisins, destined for export, may contain up to 1% of lower-quality raisins or raisins with stems. If this percentage exceeds 2%, they are downgraded to grade one.

While other Iranian cities also produce golden raisins, Melayer is considered a major production hub. A distinguishing feature of Melayer golden raisins is their slightly reddish hue, compared to the pure yellow color of raisins from other regions. Additionally, Melayer raisins are often free from paraffin coating, ensuring better preservation and color stability.
